... about your host. My name is Manfred Schülein, born in 1966, a passionate cook and author of the High Black Forest cookbook.
Having grown up within the restaurant business, from an early age I was always passionate about cooking. I learned the cooking
trade at the Hotel Jungfrau in Wilderswil/Berner Oberland, and several positions followed in renowned hotels, including the
Grandhotel Victoria Jungfrau***** and Hotel Beau - Rivage*****, both in Interlaken/Berner Oberland. A somewhat different type
of cuisine, including nature (herbs and flowers) expanded the cooking skills during my time at “Chrüter Oskar”. Confectionery
was learned and added to the profession at Confisserie Perriard in Fribourg/Switzerland. After the birth of my daughters, I
moved back to Germany and at first worked in Titisee at the Treschers Black Forest hotel, before taking over the Kurhaus-Café
in Lenzkirch. After my parents retired, I took over their guesthouse, Pension Waldwinkel in 2001, which was followed by a
number of renovations and modernisation measures in order to welcome you in the bright, comfortable rooms today. My eldest
daughter Nicole trained as a hotel manager and Melanie is a pastry chef. In 2013 Johanna was born as a “late arrival” and
Linus followed in 2019. My wife Frauke is also a pastry chef and takes care of the creative cake requests for a variety
of occasions. Nadja and Rosa take care of housekeeping and help with the breakfast service. My parents Frieda and Rudi
Schülein still support me to this day. So, that’s all about the “Pension Waldwinkel” team.
